JAVA UNICENTA POS Restaurant modification and customization

We want to use unicenta for our restaurant but we need some customizations. 1. Remove unicenta logo and all the reference to unicenta 2. We need a centra backoffice (Central Server with database to replicate all the remote locations to the main office database) 3. We need to give option to use mysql as the main database 4. real live replication of sales to the central office and send email of sale at the end of the working date 5. We need a kitchen interface for orders so the kitchen know what to cook when the order is enter by the waiters 6. Central inventory location and replication of remote restaurants to main central location for inventory control and cost We need to be creatives so we can give the final user a nice and easy operation of the system. I need some one that can make suggestion too.
