Business Data for Decisions Making & Profit/Loss Statement

We are a service based tattoo company with total of 5 artists (as of today so great to be able to easily add more). I want to have an excel spreadsheet (open to other ideas) that will allow us to 1) keep track of what EACH artist brings in revenue on a daily, weekly, monthly and yearly basis and be able to easily press a button (like a macro) and get summaries in graphs of certain things (ie: total revenue for week, YTD etc). 2) Since each artist gets paid a commission we'd like for that commission rate to be easily changed to be able to update all related data, this can go along with the # of artists; Im thinking like a summary page of the artists and their commission %'s.
3) Apart from keeping track of what each artist brings in revenue and separate what % they keep and is for the company, we also want to KNOW how much of what they brought in was CASH vs. CREDIT, if there were any prior deposits , were clients walk-ins OR appointments?, New clients or return clients?, # of walkouts (people who did not get a tattoo or leave a deposit), and the total # of deposits received for the day,week, month etc.
Something EXTRA we'd like to keep track of if possible would be the TYPE of tattoo that was done. For example a rose, a portrait of animal or person, etc. This would help us determine whats the most common type of tattoo for the month/week to run more targeted promotions.
Finally, All relevant data should also be sent to an overall Profit and loss Statement. So we'd like to see TOTAL REVENUES & Expenses to also get our Monthly, YTD and Yearly Net Income. Its necessary were able to easily compare this years activities with prior years activities to be able to make better decisions.
