Edit an .ai file for 4 vodka bottles

I have a few edits on an already made Vodka label and I dont have a way to edit it. The person that created it is now on vacation. Need done ASAP.
The edits include changing out one existing logo, for an updated one, and the rest is all wording (changing text). Should take someone experienced less than an hour.
Notes on what is needed:
1. Alcohol content statement needs to say “XX% Alc by Vol”
2. Add space between the ABV, proof and 750ml
3. The term “GOVERNMENT WARNING” needs to be in BOLD. Put the statement that follows in all capital letters. It needs to be at least 2mm high and no more than 25 characters per inch. If you are able to add this NEXT to the UPC code - that would even be better.
4. Add commodity statement on the Potato Vodka label, “100% Neutral Spirits Distilled from Potatoes”. This can go anywhere on the label, at least 2mm high.
5. On the back, take out the word YOU on the sentence that reads "delivers YOU the Spirit of Alaska". So, it will just read delivers the Spirit.....
