Baby shoe sewing

My name is Jamal and I am in the process of starting a baby/toddler shoe business. There is going to be a strong customisation element to my business and service offered in addition to unique designs. In all honesty, I would like to be involved in the manufacturing and craft side of thing (albeit I have no experience of that side of things in my life, ever) but I am also entertaining the idea of a professional, handling some, of most of the sewing element. For that reason I would just like to, at this stage, get an idea of A) How much it would cost for a sample of 1 (or two) shoes to be made so I can get an idea of practicality and quality in materials and/or design, and B) How many (if any) can realistically be made, per hour, by a professional such as yourself. If I were to outsource some work, I think this is the least I can do to be involved in the production of what I am trying to sell. Again, please let me know if this is not the usual protocol.
