Website optimization for speed

Hello,
We have a large website on a dedicated server (litespeed)
It has already been optimized to the degree it gets very good scores in speed tests but there is still room for improvement
Our first response time can be quick or very slow depending on the connection
Also, our images can take a long time to load even though they are optimized
We recently changed our site from HTTP to HTTPS and believe this could have contributed to slower load times (maybe)
Google says that a post needs 2 round trips to fully render above the fold content so this needs to be changed
We have a woocommerce theme but we dont need woocommerce components loading on posts or pages so anything to do with that can be removed
You get the idea.
We already use a list of things to help with speed like:
Litespeed's cache plugin which only works with a litespeed server
Cloudflare
Autoptimize
Images have been optimized with shortpixel to a lossy standard
We have the option of lazyloading images but that's not going to solve slow image loading times, it will just prolong them as they still have to load when in the viewport or a set px away from view port
The above plugins could probably do with better setting adjustments.
We are only hiring someone who has a track record of doing this before. This is not a simple ''I'll install a plugin and call it a day'' You will be monitored and questions will be asked.
