(POS) Quickbooks Help Cash & Undeposited Funds

Would like help to be sure QB's and QB's POS are set up properly on all networked PC's. I think the setup is fine. I know we have a problem with CASH not going into undeposited funds. Therefore, instead of putting in CASH as the payment type we say it's a check and where it says chk number we put CASH. If you think you can help please let me know.

I have latest computer with 2-3 hours battery backup in case of power failure. Then a generator for back up is also available. As for my connectivity, have 2 internet broadband connections, the best there are in the market.
