Greetings,
I'm a semi-retired engineer who did awhoe load of MS-DOS based work in the early 90s and mid 90s. Mostly in Pascal and C/C++ and Assembly.
MS-DOS batch files are very ismple, ocen you understand the sysntax used by the CLI(command line interpreter) and MS-DOS batch-files commands them selves.
I used batch files to back up a whole oad of varying data- form 6 different physical drives, on to my primary removable backup drive.
Can do this for you.
I may have some clarification questions, other than that, it should be a doddle.
As an alternative solution, I can also write a C program for MS-DOS, that does the same.

If you can send me some test data- reflecting the contents of SOURCE directory(to be copied ) - on a typical day- that may help .(for testing purposes). You can ZIP the source folder(C:\phone_backup) and email them to me thru this portal, or thru SKype etc.
