As for you printer i'm guessing it's will be working with workstations on windows. It's possible to set it up and get in running. All you need to do from your side is to connect it to the PC and run it on. Also about scanning - you can't just scan directly from remote workstation. If its an MFP printer and in supports scanning to a folder, then i can set it up as such:
person scans documents on a printer and these data comes to your print server's folder. that folder is shared and accessible in network from other workstations, so after scanning a person would find scanned documents remotely in this folder. But keep in mind that printer should support those features and also it should support remote scan configuration - some printers allow to configure it only from it's physical console.
