Apple Ipad eBook with Supporting programs (How To)

I need advise on how to technically approach an eBook/App project I have in mind. I am not very familiar with the Apple programming or distribution model, but I am a programmer with many years of experience. I have extensive vWorker buyer experience. What I want to do is create an eBook, but it also has a number of simple applications associated with it. For example, I want to implement Conway's Game of Life, cellular automata, some things that might feel like Prezi presentations, some animations, some interactive simple games similar to Soundrop (Develoe). Some embedded videos. I suspect that the best way to do this is by programming in HTML 5, but I'm not even sure of that. I may need help with the HTML 5, but that would be a separate project. You can mention if you have experience creating such a work. This project is just about selecting the development and deployment platform. Do I select Multi-touch or ePub or do I have to write a custom app and do my own eBook part. Is there a publishing partner that would be best to work with that provides part of the application support? Is pushpop out of business since Facebook bought them? Is there something else like that out there? Do I just host it in a web browser? I'm starting with zero knowledge of the iPad or Apple App store or marketplace. I'm looking for input with regards to marketing various types of apps as books, and all that sort of thing. I need advise with respect to how to list the book/app for maximum market penetration. I need someone with a huge amount of experience in this specific area, don't bid if you are not a super expert. I'll pay more for someone who can demonstrate their competence by showing me a similar book that was created with the approach they recommend.
