Pastry dough roller design

I would like to design a large high quality pastry dough sheeter. I don't have very good drawings but I can show pictures of the general idea. It will take design skills and some mechanical gear design. I have linked a picture to a similar design so you get the idea. The two rollers must spin in opposite directions when cranked and will be at 45 degrees to each other. The rollers need to be 316 stainless steel 2 inch tubing. Probably with a wall thickness of 1/8th inch. The width of the rollers will be 20 inches. The rollers need to be adjustable from 1 inch apart to touching. They will need an adjustment crank for that and an idler wheel of some kind to take up the slack in the belt when the rollers are moved closer. I would like a good mechanical design with plans and also cnc drawings for the construction of the roller. Feel free to ask questions as the design progresses. I know my drawings aren't very good. After a designer is selected I can pay in installments as the project progresses. You can be creative with the design. Nothing is set in stone. In the end I would just like to build a nice dough sheeter. They aren't sold anymore. Thanks
