Converting a scanned book (images) to formatted text

I have a scanned book (each page scanned as a separate image of about 600 images). I need to have the book transcribed into a text format where the positioning of the text is retained (such as indents, columns etc.) and to dispose of extra data on each page such as the title on top of the page and the page numbers on the bottom so we end up with a single clean text file. All hand markings and footnotes needs to be ignored. The desired output format is either doc/rtf or txt so long as the requirements indicated are met. I have attached an image of an example page. All pages will be provided to the winner of the project. To prove to me that you read and understand the requirements, please transcribe a half the provided page (attachment) into text and provide it to me with your bid. If you do a good job, there'll be more work for you to follow.
